Oscar-Worthy Vegetarian Taco Salad

If your Oscar night doesn’t include a red carpet and Marchesa dress you should be all over this vegetarian taco salad!  It’s a super yummy, low-calorie, high-protein, vegetarian dinner that you, your kids, your friends and your mama will love.

What you Need:
Handful Organic Romaine Lettuce

8 Organic Cherry Tomatoes

1 Morning Star Farms Black Bean Burger (I cook mine in the toaster)

1/2 Cup Low Fat Cottage Cheese

7 Trader Joes Flax Seed Chips (1/2 a serving)

La Vic (or other hot sauce) to taste

Start with a handful of of organic romaine lettuce, sprinkle on the toms, add your Morning Star Farms black bean patty (crumble that baby up), top with low fat cottage cheese, sprinkle your flax seed chips on top and add some La Vic!   SOOOOOO friggen good you’ll freak!

The cottage cheese will make you swear your eating some kind of artery-clogging goodness.  The black beans give it substance and flavor.  The flax seed chips give it kick and crunch.  And the romaine and tomatoes make you feeling so fresh and so clean.DSC_4014 DSC_4018 DSC_4020 DSC_4023 DSC_4025 DSC_4034Now, I’m not a dietician but here are the stats I added up for this meal.

340 Calories // 19.5 Grams of Fat (8 of those come from the chips!) // 27 Grams of Protein
