Lemon Ricotta Muffins

Oh my goodness as if Lemon Ricotta Cookies with Lemon Glaze aren’t good enough!!! My uncle Emilio has long been baking Giada DeLaurentiis’ Lemon Ricotta Cookies (with his own twist of course!).  They are a cakey pillow of lemony goodness and I had to see if they would translate well into a cuffin (cupcake//muffin).  Well, they did!  And this is something I think we will be baking over and over again this summer!  They taste great and look darling enough to bring to summer BBQs.

I used Giada’s recipe.  The only change I made was to add the juice of a full lemon to both the cookie and the glaze!  I’m a major lemon flavor fan and how can you beat fresh squeezed lemon! You can watch Gia’s video here! {By the way, this recipe works well with mini muffins but I think it would be way too much as a full size muffin.}

*** The glaze is a super easy way to get your kids involved!  Here’s my Gia fresh out of the bath with her curls in tow!
